If you follow me on Instagram, you’ll know that the other day was Marco James’ 8th birthday. To make me less sad about the idea that he’s getting older, I celebrate him in a big way. Is it extra? Definitely. Do I care? Absolutely not. One of the most precious and cutest moments of my life was when Dan, Penny, and I sang “Happy Birthday” to him in the chair- we were so off-key that he abdicated his throne and walked away. He’s judgmental that way.
I’ve been making my dogs homemade birthday cakes for years, but Marco’s is a little different because he is a sweet tooth gremlin. If he hears the word “ice cream” from any corner of the home, he will immediately stand by the freezer and wait. So, for his cake, I use sweeter ingredients like peanut butter and coconut milk, but I’ll outline where you can put pumpkin or apple sauce instead. (Marco hates pumpkin. He’s persnickety that way.)
Let’s get into it!
WHAT YOU’LL NEED:
1 Egg
1 Cup of Rice Flour (or regular flour! Either is fine, I used rice because Marco had an upset stomach the night before)
1/4 Cup of Coconut Milk (you could use Pumpkin or Apple Sauce here)
2-3 Tbsp. of Peanut Butter
1/2 tsp baking soda
PUT IT ALL TOGETHER:
Preheat oven to 350 degrees F.
In a large bowl, combine flour and baking soda.
In a separate bowl mix together coconut milk & peanut butter. Once combined, mix in egg and mix until combined.
Combine wet and dry ingredients and stir until combined.
Pour mixture into an 8" round pan or silicone dog bone
Bake for approximately 25 minutes or until a toothpick inserted into the center comes out clean and the cake springs back when pressed lightly.
Allow to cool
After cooling, add frosting if desired.
For Marco’s frosting, I whipped together the coconut milk and just poured it onto the cake with dog-friendly sprinkles. You can use 1/2 cup of Greek yogurt & 1/2 cup of peanut butter in a mixer for a more decorative topping.
