We made it! It’s Thursday.
For my Vanderpump fans, how are you feeling? At one point, I was watching Sandevil justify his actions by saying he and Rachel were friends and had a connection. I texted my mom, “I have had this exact conversation. This is wild.” It is wild to see that kind of betrayal and sandbagging happen on a not scripted television show. It’s also wild to think in another life, this type of situation happened to me… twice.
It’s also disgusting that the men in this group always covered each other’s actions, and used classic gaslighting techniques to turn the audience and their friends into thinking the “women” were the problem. The best thing that happened to Jax, Kristen, and Stassi was their 2020 cancellation because they are much better people outside of this toxicity. And, I believe the same will happen for Ariana and Katie.Finallyy, justice for Katie.
Since last night was my SURperbowl, I wanted to make a comfort dish. For me, comfort always comes in the form of pizza and I love playing around with different doughs and flavors. Plus, I wanted an excuse to use our Cuisinart Pizza Cooker.
So, let’s get into it:
Before we start, this week, I used the Garlic/Herb dough from Trader Joe’s. We were watching our nephew last night so I knew I wouldn’t have time to make my own dough. However, if you want to be fancy, here is the recipe to make your own dough!
WHAT YOU’LL NEED
Room Temperature Pizza Dough (store-bought or homemade- we’re a no-judgment zone)
Fig Butter
Honey
Red Pepper Flakes
Prosciutto
Arugula
Fresh Lemon
Grape Seed Oil
Fresh Mozzarella
Flour
PUT IT ALL TOGETHER:
Preheat your oven to 425.
Using the flour, sprinkle it on your dough, knead it, and roll it to the shape you want. Once rolled out, sprinkle your dough with red pepper flakes, salt, and pepper. Then, rub it with grapeseed or olive oil. Then, take 2-3 tablespoons of fig and spread it across the dough. Then, drizzle with honey and place your fresh mozzarella throughout the dough.
In a frying pan, crisp your prosciutto and then top your dough with it. If you have a pizza oven, turn that bad boy on and let it get to 600 degrees. If you’re cooking this in your oven, pop your pizza in there for 20 minutes. While it’s cooking, take your arugula, put it in a bowl, and sprinkle it with garlic, salt, pepper, fresh lemon, and grapeseed oil. You can also add tomatoes if you’re feeling frisky.
When your pizza is finished, top it with the arugula salad and serve!
Viola, you fancy.
As always, my gratitude is off the charts for you.
In some exciting news, www.leannegelish.com is ready! I took a little time from photography this year, all with the intention of digging deeper to call in more dream clients.
A few years ago, I had my palm read and part of the reading said that I have two destiny lines that will come together in my mid-thirties. It feels good-spooky that writing and photography are coming together, and I’m looking forward to more sessions with deep intentions.
I hope you enjoy your weekend and we’ll see you Monday with a little bit of Soul.
