This week, I’m sharing one of my favorite appetizers to make for Game Day Eats.
If you’ve been here a while, you can probably tell that I’m not Beverly Homemaker vibes: I’m not spending my Sunday catering to my husband, while he wears a jersey and screams at a TV because he’s about to lose our mortgage payment on a box that he set up with his college bros to feel young. (side note, Dan is not this guy.)
But, I do love this dip so I will embrace a get together as an excuse to make it. While I’m sure you’ve seen this recipe in other spots, there are a few key differences to mine.
It’s all low fat
I don’t use shredded chicken
So, let’s get into it
WHAT YOU’LL NEED:
A Crockpot (don’t have one- no worries, use a cast iron pan)
1 tablespoon olive oil
2 teaspoons minced garlic
2 chicken breasts, chopped
1/2 cup Frank's Original Red Hot Sauce
8 oz g Low Fat block cream cheese, softened
1/2 cup Light sour cream
1 cup Thick Cut Cheddar freshly shredded
1/4 cup crumbled blue cheese
2 teaspoons chives
PUT IT ALL TOGETHER:
First, season your chicken breast with garlic, salt, pepper and cayenne pepper. In a frying pan with your olive oil, cook the chicken breasts through, and then chop to bite size pieces. Put the bite size pieces back in the frying pan and put 3 tablespoons of your Frank’s Red Hot in and stir. It will give the chicken an extra bite
As that cools, Slice Your Cream Cheese block into fours
In your crockpot, layer in your Garlic, Cream Cheese Blocks, Sour Cream, Chicken and blue cheese. Mix it together and make sure it’s even. Then, spread your Thick Cut Cheddar on top (a nice thick layer), and let the dip cook for 1 hour at high.
Serve hot with Celery, Carrots or Tortilla Chips.
