With Salt: Orecchiette with Chicken Sausage & Broccoli Rabe
Because sometimes, a little bitterness is okay.

This week has been one of those “ah ha” weeks in so many ways and I continue to be in awe of this year is shifting my life piece by piece. As vague as that is, it’s my hope that you take inventory of your blessings, too.
This weeks “Salt” is one of my favorite dishes that my brother in law introduced me to. I’ve made some adjustments, specifically incorporating chicken sausage, and I find this dish to be so easy and delicious.
So, let’s dive into it!
WHAT YOU’LL NEED
1 large bunch broccoli rabe, washed and 2" trimmed off stems
1 package of Chicken Sausage
Olive Oil
Garlic Cloves, cut how you like it
1 bag or 10 oz of orecchiette pasta
1 cup less sodium chicken broth
1/4 cup of Parmesan- I am a thick cut girly, but use what you like!
Salt, Pepper, Red Pepper Flakes
PUT IT ALL TOGETHER
First, start boiling your water since a watched pot takes forever. While that’s working, cut broccoli rabe in quarters and add it to the boiling water. Blanch the broccoli rabe for 2 minutes, drain it, and set it aside for later.
Refill your pot, bring it back to a boil and on another burner, start cooking your chicken sausage. Add in your olive oil, garlic and on a medium heat, let the whole chicken sausage cook. Another option: sear the chicken sausage and then cut it into little pieces and put it back on the heat.
Check your boiling water, add in the Orcchiette pasta, and move back to your sautéed pan.
Once your chicken sausage is browned, add in your broccoli rabe, season it with salt and pepper and cook for about a minute. Drain your pasta, add it to a bowl, add in your chicken broth, chicken sausage/broccoli rabe mix, stir it all together and serve.
Boom. Mambo Italiano should be playing in the background for an added touch!
As always, I’m grateful you’re here. Part of this “ah ha” week has been realizing that my frequency with the universe has been static. I’ve spent my time adjusting that frequency and it has landed here. Salt with Soul is my clarity and I’m in awe at how it’s grown so naturally.
This weekend, I’m going wedding dress shopping with my future sister in laws, my best friends, future mother in law and Mom. I didn’t have this “let’s all go find a dress” moment at my first wedding, and it’s a testament to the much better place I’m in that I have people that love us as individuals and as a couple so unconditionally.
To all the Moms on here- the mothers who dedicate their days to their kids, to the dog moms who know it’s different, but for them, their dog is their way to nurture, to the women who act as auntie-moms to the children in their lives, to the women who are maternal to all around them, and to the woman who are the matriarchs of their world- you deserve more than one day to celebrate the love you exude. This weekend isn’t easy for everyone and for anyone in grief, my heart is with you. Hold close to your heart that above all else, it’s a day to celebrate love- and we all have that around us.
