With Salt | Shaved Peach with Mint over Brown Sugar Whipped Cream

Happy Thursday, friends.
I just realized it’s been an entire month without some Salt but we are changing that today.
I think I have two TikTok accounts, but don’t ask me how to use them. Look, I want to be a TikTok girly. I do. But, one of my accounts is in a poetry algorithm and I get overwhelmed with the “if you’re reading this right now this is your sign to change your life!” videos. So, I stick to Instagram.
Which means I’m about 6 weeks late to the Shaved Fruit Trend!
Today’s recipe is really centered on the Whipped Cream, because once you try homemade Brown Sugar Whipped Cream, you’re never going back to the traditional way. It’s not overwhelming, and balances the peaches and mint in a beautiful way.
So, let’s get into it.
What You’ll Need:
two frozen peaches
16 oz of heavy whipping cream
2 tbsp of Vanilla Extract
A handful of mint, chopped
1 cup of brown sugar
Put it all Together:
Put your peaches, mixing bowl and whisk in the freezer for as long as possible. When the mixing bowl and whisk is ice cold, it allows the cream to whip, thicken and hold its structure longer.
First things first, pour your 16 oz. of heavy whipping cream in the bowl and start mixing at high. After 2 minutes, add your cup of brown sugar, the vanilla and let it whip and nae nae for 5-10 minutes while you shave your fruit.
Why Brown Sugar? It’s not as sweet as confectioner sugar, and it balances out the fruit a little better. If you’re looking for that sweet flavor, you can always swap it, but you’ll need about 2 cups of confectioner sugar.
Shave your peach with a grater, watch your fingers, chop up your mint, mix it together and serve over your whipped cream.
Easy, no? But, it looks fancy if you bring it to a party this weekend. And, really- that’s all that matters!
