With Salt: "What do you Mean, he don't eat no meat?"
A fun greek inspired Chicken Meatball Flatbread Dish
Happy Thursday, friends.
This week, we’re making an absolutely delicious, absolutely healthy, absolutely flavorful Greek dish that I plan on making AGAIN tonight.
So, here’s the deal: I started this dish by making it as meatballs, but the meatballs stuck to the pan so we had this delicious ground chicken mix that honestly, might have been better.
We’re all about the pivot here.
My favorite aspect of this dish is mint in the meatballs. The way it adds flavor, while also neutralizing the dill and red pepper is just… amaze-balls. (is that still a thing? Am I dating myself?)
Alright, so let’s get into it!
INGREDIENTS:
Ground Chicken
Egg
1 cup of Panko or Almond Flour- whatever floats your boat
Spices:
sea salt, fresh dill, dried basil, red pepper flakes, garlic powder and ground black pepper
A handful (or cup) of fresh mint
Cucumbers
Kalamata Olives
Tomatoes
Feta Cheese
Pita or Flatbread
Tzatziki- you can buy it, you can make it- this is a no judgement zone, here.
STEPS:
Take your ground chicken, egg, panko, spices, and mint, and mix it all together until blended well. Using an ice cream scoop, make your meatballs and place them in your frying pan and let simmer. As you can see, I really wanted the mint to be on display, but you could mince it before the mix.
As those are simmering, chop up your cucumber, tomatoes, feta and olives and put in a bowl to toss up. Add a little olive oil, salt, pepper and fresh lemon juice and let it sit until ready to serve.
Heat up your pita bread or flatbread of choice in the oven.
When your meatballs are ready, or your ground chicken if you’re more like me, toss 2-3 tablespoons of tzatziki on your vegetables, put it into your pita or on top of your flatbread. Then, place your meatballs/meat mix on top and sprinkle with a little garnish on top.
Boom.
It should be 30 minutes or less and even your olive disliking fiancé will enjoy this dish ;)
